Grilled Prawn Spaghetti with Roselle Cream Sauce I Know You Are Hungry is a food stall that can be found at flea markets for art and other creative works in Bangkok. It was founded by three siblings who love making and eating food. Our menu mainly consists of pasta dishes, some of which incorporate Thai flavors. We’re participating in BKKDW2023 with the belief that food is a part of cultural conservation. We were inspired by roselle, a plant native to Thailand that has a distinctive tart flavor and has nutritional benefits. Most people are only familiar with roselle made as a drink, so we thought to reinterpret the ingredient in food. Our Grilled Prawn Spaghetti with Roselle Cream Sauce boils roselle with meat and combines with a white sauce to create a red cream sauce that is rich, fragrant and flavorful like a white sauce but with the added sweetness, acidity, and aroma of roselle. The result is a pasta dish that is more refreshing and lighter than a white sauce pasta. The spaghetti is served with fresh grilled prawn that adds a bit of sweet and salty for a complete and balanced dish. This dish combines roselle, a commonplace ingredient that is falling out of favor with younger generations, with pasta, which is currently popular. We wanted to get creative with our approach to this ordinary ingredient and keep it relevant in a new way. We hope that event-goers will have a chance to share in the ideas behind this dish.
